I've installed Emacs and I can get the window to pop up from the terminal. But I don't want to run terminal every time I need Emacs - where's the GUI icon for it? I don't see it in the Applications submenus (I'd think it would be in Programming).

Try right-clicking on Applications (or Places or System, for that matter) and selecting "Edit Menus." It might not be showing up by default, you might have to select it manually.
